Dwaeji gukbap is the dish Busan is genuinely known for inside Korea: pork broth, rice, and sliced boiled pork, finished at the table with chives, shrimp sauce and fermented soybean paste. Broth comes in two broad styles — milky and rich, or clear and clean. Neither is more authentic; pick by what you feel like eating.
