Dwaeji Gukbap: Busan’s Pork Soup

About

Walk about six minutes from Exit 8 of City Hall Station, following the lane by Starbucks. There is no dedicated parking, so use a nearby paid lot. The walk suits an office lunch near City Hall; call the restaurant for group meals and takeaway.

Milky bone broth comes with a choice of pork, offal and blood sausage. The assorted bowl combines several textures. Add chives and thin noodles, then use salted shrimp and chili seasoning a little at a time.

Pork-and-offal soup costs KRW 10,000 and the assorted bowl KRW 10,500. Pork-jowl soup and a set combining belly and jowl slices are also available. A children’s soup gives younger diners their own smaller meal.

Four-person and larger tables work for colleagues or a small gathering. Some pork in the assorted bowl has a generous layer of fat; ask before ordering whether a leaner selection is possible if that matters. Water and extra side dishes are self-service.
