Dwaeji Gukbap: Busan’s Pork Soup

About

This alley restaurant sits between Gukje Market and the Daecheong-dong junction. There is no dedicated parking; walk from Jagalchi Station or use a paid lot nearby. Order at the kiosk. Takeaway is available.

The broth is clear and noticeably peppery, with soft pork and a lighter finish than a thick milky soup. The boiled-pork set keeps the moist meat separate from the soup. It fits a market-day breakfast or a lighter pork-soup lunch.

Pork, blood-sausage and offal soups are joined by a boiled-pork set and small shared plates. The signature pork soup can include meat, offal and sausage, so request any exclusions before ordering. Pick up water yourself and eat the soup with kimchi and radish kimchi.

Pepper and seasoning can be assertive; taste before adding more. The offal bowl may contain less sausage than expected. High chairs and table seating allow family meals. This is a different address from Sinchang Gukbap on Bosu-daero in Seo-gu.
