Milmyeon was created in Busan by North Korean refugees who could not get buckwheat and used wheat flour instead. The result is softer and chewier than naengmyeon, served either in chilled broth or mixed with a sweet-spicy sauce. It is a summer dish locally, but the shops below run year-round.
