A long-loved Gaya-style milmyeon shop on Namcheon-dong-ro in Suyeong-gu. The room runs deeper than it looks from outside, and hot-weather lunch seats fill quickly. Bring the parking ticket when paying, because visits over KRW 10,000 have a KRW 1,000 parking-support note.
The cold broth milmyeon is the main order. The broth is icy, clean, and savory rather than sharply aggressive, and the noodles are springy enough to keep the bowl refreshing to the end. Add vinegar or mustard to tune the sourness to your taste.
The broth-mixed noodles sit between cold broth milmyeon and spicy mixed milmyeon. The sauce is sweet-sour and not too spicy, while the broth keeps it from feeling heavy. Skate garnish adds texture, and the thicker spicy mixed noodles feel more substantial if you want a stronger sauce.
The steamed dumpling plate is worth adding. The handmade dumplings come out warm, with thin skins and a moist filling that fits well between bites of cold noodles. Warm broth and radish kimchi round out the table, and alcohol is served on the second floor after 16:00, so daytime noodle visits and evening drinking visits work a little differently.
