Michelin pre-released six new names ahead of the full 2027 selection, and three of them are in Busan. One thing worth stating plainly: these three do not have a tier yet. The announcement says only that they have joined the selection, and the guide site and app show them with a New marker. Stars and Bib Gourmand are decided at the full reveal next spring. For context, the 2026 Busan list ran to 58 restaurants — 4 with one star, 20 Bib Gourmand, the rest Selected. Two of the newcomers sit on Dalmaji-gil in Haeundae and the third is in Millak-dong, Suyeong-gu. The food could hardly be further apart — Pyongyang-style cold noodles, pork soup rice, and dry-aged Korean beef steak — so pick one rather than plan a route.
