Shio ramen is the cleanest first order: a clear but deep broth, flat house-style noodles that hold the soup well, tender chicken, bamboo shoot, green onion, and onion to keep the bowl from feeling heavy. Abura soba and perilla-oil cold mixed soba add richer mixed-noodle options. It suits solo ramen, Haeridan-gil dates, and ramen tours more than group dining.
