The main order is the Hanwoo assorted yang gopchang plate: yang, daechang, sochang, and yeomtong in one round. The restaurant emphasizes direct offal distribution and selection, and the meat comes with a garlic-forward seasoning that keeps the offal cleaner. Staff cook and cut the pieces at the table, although during busy hours you may still need to turn pieces between checks.
