Hanoi brisket pho has a deep broth that works well after drinks, with cilantro, lime, and Vietnamese chili available for adjustment.
The beef-intestine pho at KRW 15,000 is fairly spicy and heavier than a standard bowl, with brisket and small intestine giving the soup more body. Charcoal-grilled pork rice bowl at KRW 13,000 is the safer crowd-pleaser, while nuoc mam fried rice at KRW 11,500 gets its lift from the fish-sauce-based seasoning.
